The first incarnation of AO Sushi was Rainbow House, a fresh fish store in Arlington Heights. One day a Wilmette customer mentioned she didn’t want to have to drive all the way out to Arlington Heights for high-quality fish, and Rainbow House rose to her suggestion. There are fish and Japanese food lovers throughout the Chicagoland area, and we wanted to make sure they were fed properly.

This very store was prompted by her recommendation. Rainbow Fish House opened here in 1984, gaining popularity through word of mouth, and two years later we became Sea Ranch.

Originally, we were strictly a fish and sashimi store. But our manager was familiar with the sushi business, plus we already had the ingredients on hand. As an afterthought, Sea Ranch added three seats and a sushi bar. The demand for high quality, fresh sushi in Wilmette was higher than we expected, and we are proud to bring those same elements to our customers today.

Now, as AO Sushi, we offer fresh fish for sale to cook or make sushi in the comfort of your home, with a quality, full-scale sushi bar for all of your sushi-to-go needs.
